Spinach with Pine Nuts and Apricots



100 grams dried apricots
2 tablespoons olive oil
2 bunches spring onions sliced
3 cloves of garlic
1 bunch spinach with stalks removed
1 teaspoon of nutmeg
100 grams pine nuts, toasted
Option: 3-4 tablespoons double cream


Soak apricots for 10 minutes in boiling water. Drain and chop. Heat olive oils in pan and saute onion and garlic for 3 minutes. Increase heat and add spinach.  Stir vigorously until just wilted.  Add nutmeg and apricots.  Add cream. Turn into serving dish and sprinkle pine nuts on top.
