Beetroot in Sour Cream



2 cups peeled and diced raw beetroot
2 onions, chopped
1/2 teaspoon of caraway seed
1 cup of water
1/2 cup of cream
2 teaspoons white vinegar
1/2 teaspoon of horseradish (optional)


Combine beetroot, onion, caraway seeds and water in saucepan.  Cover.  Bring to boil then simmer until beetroot is tender. Combine remaining ingredients and add to beetroot.  Serve hot.
